I HAD NO IDEA AVOCADO TOAST WAS SO GOOD!! So many different things you can do with it! I found this post that has a ton (20) of combinations and I can’t wait to try them all. I made the pomegranate seeds (minus these because they’re messy), strawberries, feta, and balsamic combo. The balsamic vinegar needed to be reduced in a pan first. Bring to a boil then simmer till it starts to thicken. Combine the rest of the ingredients onto your choice of toast and walah! We used a cheese asiago bread, delish. The fruity taste of strawberries mixed with the bold balsamic paired well with the avocado.
We also made the fried egg version, with some small grape side tomatoes including merlot tomatoes (I believe they’re called). This wasn’t as bold of a flavor as the strawberry combo, but still tasty.
